Frankfurt was seen as the crown city of the German Empire for many years, hence the name of this dessert. Frankfurter Kranz is considered a reminiscence of Frankfurt as the coronation city of the German Emperors.
This cake is supposed to symbolize a crown with the golden almond brittle around the outside and the jewel-like cherries as decoration.
The Frankfurter Kranz is a vanilla sponge cake filled with strawberry jam and german vanilla buttercream. The cake then is decorated with german vanilla butter cream and almond brittle, and finally cocktail cherries.
