Beer Bread

This is an amazing Rye/Wheat/Sourdough bread made with Beer. It is a mild very filling bread. Great with everything from jam to lunch meat or with a good bowl of soup. Here is a suggestion of how we eat it.

This is a Quark(Curd) Spread. Since quark or curd is hard to find in the US you can substitute it with either Sour creme or Cottage Cheese.
You will need:
16 oz Cottage Cheese or Sour Creme
1 medium diced onion
a good amount of freshly chopped chives
4-6 tbs milk/heavy creme
Sea salt

Add all ingredients to a blender and mix until it has a smooth consistency (not runny). Add Sea salt for taste and you are done. Keep leftovers refrigerated.
